Ingredients

Scale

Main Ingredients

  • 23 fresh ripe peaches, sliced into wedges or chunks
  • 2 ripe avocados, peeled, pitted, and diced
  • 150g fresh mozzarella balls (bocconcini or ciliegine), torn or sliced
  • 4 cups baby arugula or mixed greens
  • 1012 fresh basil leaves

Dressing

  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey or agave syrup (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Peaches: Wash the peaches thoroughly. Slice them into thin wedges or bite-sized chunks to highlight their juicy texture and mix easily with other ingredients.
  2. Cube the Avocado: Cut ripe avocados in half, remove the pits, and scoop out flesh. Dice into medium chunks to retain creaminess. Immediately toss with a splash of fresh lemon juice to prevent browning.
  3. Tear the Mozzarella: Tear or slice fresh mozzarella balls into smaller, manageable pieces suitable for balanced bites throughout the salad.
  4. Assemble the Salad: On a large platter or in a bowl, arrange a bed of baby arugula or mixed greens. Evenly distribute peach slices on top, then scatter avocado cubes and mozzarella pieces. Garnish with fresh basil leaves for aroma and flavor.
  5. Dress and Serve: In a small bowl, whisk together extra virgin olive oil, fresh lemon juice, honey (if using), salt, and pepper. Drizzle dressing over the salad just before serving to keep greens crisp and flavors fresh.

Notes

  • Choose perfectly ripe peaches that are fragrant and slightly soft but not mushy for best flavor.
  • Use fresh mozzarella instead of pre-shredded cheese for creamier texture and cleaner taste.
  • Immediately toss avocado chunks with lemon juice to prevent browning.
  • Serve salad immediately for optimal freshness; avocado and greens tend to wilt or brown over time.
  • Chill peaches, mozzarella, and greens before assembling to ensure a refreshing and crisp salad.
