Instructions

  1. Prepare the Marinade and Chicken: In a bowl, combine sweet chili sauce, coconut milk, fresh lime juice, minced garlic, and grated ginger to create a creamy marinade. Toss the chicken pieces in the marinade and let them soak for at least 15 minutes to absorb all the flavors.
  2. Cook the Rice or Grain: While the chicken marinates, cook jasmine rice according to package instructions until fluffy, providing the perfect base for the bowl.
  3. Sauté the Chicken and Vegetables: Heat a little oil in a large skillet over medium-high heat. Add the marinated chicken pieces and sauté for about 5-7 minutes until cooked through and slightly caramelized.
