Ingredients

Noodles

  • Any quick-cooking variety like instant, egg, or whole wheat noodles (quantity as per servings)

Oil & Ghee

  • Oil – 2 tablespoons
  • Ghee – 1 tablespoon

Tempering Spices

  • Mustard seeds – 1 teaspoon
  • Cumin seeds – 1 teaspoon

Aromatics

  • Chopped onions – 1 medium
  • Chopped garlic – 3 cloves

Fresh Vegetables

  • Chopped tomatoes – 2 medium
  • Chopped green chilies – 1-2 (adjust to taste)
  • Optional vegetables (peas, carrots, bell peppers) – 1 cup mixed

Spices

  • Turmeric powder – 1/2 teaspoon
  • Red chili powder – 1/2 teaspoon (adjust to taste)
  • Garam masala – 1 teaspoon

Finishing

  • Fresh coriander leaves – a handful, chopped

Instructions

  1. Prepare the Noodles: Bring water to a boil, add the noodles, and cook them just until tender according to package instructions. Drain and set aside to avoid sogginess later.
  2. Make the Tadka (Tempering): Heat oil and ghee in a pan over medium heat. Add mustard seeds first; when they start to pop, add cumin seeds, then immediately stir in chopped onions and garlic until golden and fragrant.
  3. Add Spices and Aromatics: Mix in chopped green chilies, tomatoes, turmeric, red chili powder, and garam masala. Cook until the tomatoes soften and the spices release their aroma in the sizzling oil.
  4. Combine Noodles and Vegetables: Add any optional vegetables you like and stir-fry for a few minutes. Then toss the drained noodles into the pan, mixing thoroughly so every strand is coated in the flavorful tadka.
  5. Garnish and Serve: Sprinkle freshly chopped coriander leaves on top, give a final toss, and serve hot.

Notes

  • Use freshly ground or whole spices for the best aromatics in the tadka.
  • Slightly undercook noodles as they will continue cooking with the tadka.
  • Adjust green chilies and chili powder to control spice levels.
