Ingredients

Scale

Base Ingredients

  • 4 medium Russet Potatoes
  • 1 cup shredded Cheddar Cheese
  • 2 Green Onions, chopped
  • 1/4 cup Bacon Bits (optional but recommended)
  • 1/4 cup All-purpose Flour (or gluten-free flour for gluten-free option)
  • 1 large Egg
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1/4 teaspoon Paprika
  • 2 tablespoons Crispy Oil (such as vegetable or canola oil) for frying or pan-searing

Instructions

  1. Prepare the Potatoes: Peel and boil the russet potatoes until just tender. Drain well and mash smoothly to create the base for your Tater Brick Bites.
  2. Mix Ingredients: In a large bowl, combine the mashed potatoes with shredded cheddar cheese, chopped green onions, bacon bits (if using), flour, egg, salt, pepper, and paprika. Mix evenly until fully blended.
  3. Form the Bricks: Shape the mixture into small, rectangular ‘bricks,’ pressing firmly to ensure they hold together during cooking.
  4. Cook to Crispy Perfection: Heat oil in a pan over medium heat. Fry each brick carefully for about 3-4 minutes on each side until they are golden and crispy. Alternatively, bake at 425°F for 20-25 minutes, flipping halfway through.
  5. Drain and Serve: Remove the Tater Brick Bites onto paper towels to remove excess oil. Serve warm with your favorite dips, garnishes, or side dishes.

Notes

  • Drain potatoes thoroughly and allow them to cool slightly before mixing to prevent sogginess.
  • Cook in batches to avoid overcrowding the pan for even crispiness.
  • Maintain medium heat to avoid burning the outside while cooking the inside properly.
  • Press the mixture firmly when forming the bricks to keep them intact during cooking.
  • Try different cheeses like gouda or pepper jack for unique flavor variations.
