Ingredients

Scale

Base Ingredients

  • 2 medium-sized zucchinis, sliced into 1/4-inch thick rounds
  • 1 tablespoon olive oil (for brushing)
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Toppings

  • 1/2 cup tomato sauce (marinara or homemade)
  • 3/4 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • Fresh basil leaves, for garnish

Seasonings

  • 1 teaspoon Italian seasoning (blend of oregano, thyme, etc.)

Instructions

  1. Prepare the Zucchini Base: Wash and slice the zucchinis into 1/4-inch thick rounds. Lightly brush both sides of each slice with olive oil and sprinkle with garlic powder, salt, and pepper. Arrange the slices evenly on a parchment-lined baking sheet, ready for baking.
  2. Pre-Bake the Zucchini: Place the baking sheet in a preheated oven at 400°F (200°C) and bake the zucchini slices for about 10 minutes. This softens the zucchini and helps prevent sogginess once topped.
  3. Add Tomato Sauce and Cheese: Remove the zucchini from the oven. Spoon a small amount of tomato sauce onto each slice, spreading it evenly while leaving a small border around the edges. Generously sprinkle shredded mozzarella over each slice, then add a dusting of Parmesan cheese on top.
  4. Bake Until Melted and Golden: Return the zucchini pizzas to the oven and bake for another 8-10 minutes, or until the cheese is melted, bubbling, and just starting to turn golden brown.
  5. Garnish with Fresh Basil and Serve: Take the zucchini pizzas out of the oven and immediately scatter fresh basil leaves over each piece. Serve hot for the best flavor and texture.

Notes

  • Dry your zucchini slices well after cutting to reduce moisture and avoid soggy crusts.
  • Use just enough tomato sauce to keep the zucchini crisp and prevent watery bites.
  • Add fresh basil right after baking to preserve its aroma and bright green color.
  • Opt for low-moisture mozzarella cheese for better melting and less water release.
  • Experiment with different cheeses like feta or goat cheese for added flavor twists that complement basil.
